A refreshing and moist cupcake is a lemon cupcake. I usually make them in the summer months - they're refreshing!
You can use sour cream or plain yogurt in this recipe. I have even tried lemon yogurt and they were awesome!
1 cup butter, softened (2 sticks)
2 cups white sugar
2 1/2 tsp. lemon zest
1 tsp. vanilla
3 1/2 cups all purpose flour
1 tsp. baking soda
1/2 tsp. baking powder
1/4 tsp. salt
2 cups sour cream or yogurt
Preheat oven to 350 degrees.Cream together butter and sugar in a mixing bowl. Beat in eggs one at a time and mix well. Then add vanilla and lemon zest.
Combine dry ingredients in another bowl. Add to sugar/butter mixture; alternating with sour cream or yogurt. The batter should be pretty thick.
Spoon batter into lined cupcake pan and bake for 25-30 minutes or until toothpick comes out clean. Cool in pan for 15 minutes, then move to wire rack to cool completely before frosting.
Here's a delicious lemon frosting to go with them:
3 T. butter
2 1/4 cups powdered sugar
1 1/2 T. lemon juice
3/4 tsp. vanilla
1 T. milk
Cream butter and sugar in bowl. Add lemon juice, vanilla,and milk - beat until smooth. Frost cupcakes and decorate each cupcake with a little lemon zest on top!
