Bushel of Apples 1
This basket of apples cake was made for a bride who's wedding was being held at an apple orchard.
Baked the red velvet cakes and cream cheese filling. Stack, fill and shaped to form basket.
Make chocolate butter cream and crumb coat the entire cake. Refrigerate.
Begin decorating the cake with the basket weave technique using chocolate butter cream. Store in refrigerator.
Form apple shapes out of rice crispy treats. Frost with butter cream and cover with red fondant. Make little leaves and stems also out of fondant. Attached stems and leaves to apples and allow to dry.
Once dry, arrange apples on the top of the cake basket, using water/gum paste if necessary.
Roll out and twist two strands of chocolate fondant and shape into a U to form the handle, repeat for second handle. Allow to dry. Insert into cake using toothpicks or dowels.
Decorate basket border and pipe veins to finish.
Lightly steam apples using a handheld steamer to give them a shiney/glossy effect.
