1 (10 ounce) package frozen spinach, thawed
1 cup mayonnaise
1 1/2 cups sour cream
1 pkg. Knorr vegetable soup mix
1 (8 ounce) can water chestnuts, chopped
3-4 green onions, chooped

#2) Lox Tea Sandwiches With Dill
16 slices white or whole wheat bread
16 ounces cream cheese, softened
1 lb. lox, thinly sliced (salt-cured salmon)
1/4 c. milk
2 1/2 T. fresh dill, chopped
2 1/2 T. freshly squeezed lemon juice
1 t. celery salt
8-10 chives or green onions
1 red onion sliced thin

Preheat oven to 350 degrees. Cut crusts off bread and cut bread in half, whichever way you choose. Place bread on cookie sheets in a single layer. Cook for 10 minutes or until golden brown. Remove from oven and cool.
In a mixing bowl, whip cream cheese until lumps are gone. Add milk and beat until smooth. Add dill, lemon juice, and celery salt and mix until combined.
To assemble the sandwiches, spread cream cheese mixture onto each piece of toast, then layer a piece of lox on top of cream cheese, top lox with chives, and finally add red onion. Serve open-faced and enjoy. May have some left over cream cheese and lox due to the size of bread used. Use for breakfast the next day!
