Our Favorite Cake Recipes:

1) Easy Chocolate Cake
2 cups white sugar
3/4 cup unsweetened cocoa powder
1 3/4 cup all-purpose flour
1 1/2 t. baking powder
1 1/2 t. baking soda
1 t. salt

2 eggs
1 cup milk
1/2 cup vegetable oil
1 1/2 t. vanilla
1 cup boiling water

Preheat oven to 350 degrees. Flour and grease two nine-inch round pans.
In a large bowl, combine the sugar, cocoa, flour, baking powder, baking soda, and salt. Mix in the eggs, milk, oil, vanilla on medium speed for a couple of minutes. Lastly, stir in the boiling water. Pour an even amount into each pan.

Bake for 30-35 minutes. Test with toothpick to see if done. Cool in pans for 15 minutes, them remove and cool completely before frosting. Frost with your favorite chocolate frosting. We like our Decadent Chocolate Frosting.

2) Simple White Bridal Shower Cake
1 1/2 cups flour
1 3/4 cup baking powder
1/2 cup milk

1 cup white sugar
1/2 cup(1 cube) butter
2 eggs
1 1/2 t. vanilla

Preheat oven to 350 degrees. Flour and grease a 9x9 cake pan.

Cream together the butter and sugar in a mixing bowl.Beat in eggs one at a time, then add vanilla. Comine flour and baking powder, then add to the creamed mixture and mix. Stir in the milk until smooth. Pour into prepared cake pan.

Bake for 30-35 minutes. Test with toothpick to see if done. Cool completely before frosting. Frost with your favorite frosting. We recommend a Buttercream frosting.

3) Carrot Cake
4 eggs
2 cups white sugar
1 1/4 cups vegetable oil
1 1/2 t. vanilla

2 cups all-purpose flour
2t. baking powder
2t. baking soda
2 1/2 t. cinnamon
1/2 t. salt

2 1/2 cups grated carrots
3/4 cup chopped pecans (optional)

Preheat oven to 350 degrees. Flour and grease a 9x13 inch pan.

Beat together eggs, sugar, oil, and vanilla in a large mixing bowl. Mix in flour, baking powder, baking soda, salt, and cinnamon. Stir in the carrots and fold in pecans. Pour into 9x13 pan.

Bake for 40-45 minutes or until toothpick comes out clean. Let cool in pan for 15 minutes before taking out. Cool completely before frosting. Frost with Cream Cheese Frosting.

4) Red Velvet Bridal Shower Cake
2 1/4 cups sifted cake flour
1 t. baking powder
1 t. baking soda
2 T. unsweetened cocoa
1/4 t. salt

1 cup buttermilk
2 T. red food coloring
1 t. distilled white vinegar
1 1/2 t. vanilla
1 1/2 cups white sugar
1/2 cup butter,softened
2 large eggs

Preheat oven to 350 degrees. Grease and flour two 9 inch round cake pans. Sift flour, baking powder, baking soda, cocoa, and salt into a medium sized bowl. Whisk buttermilk, food coloring, vinegar and vanilla in a small bowl. Beat sugar and butter in a large bowl with a mixer until blended. Beat in eggs one at a time and make sure they are well blended before adding another. Beat in dry ingredients in four additions, alternate with the buttermilk mixture in three additions.

Pour batter evenly into greased pans. Bake 25-30 minutes or until cake tester comes out clean. Cool cakes in pans about 15 minutes before removing onto wire rack. Cool completely before frosting. Frost with Cream Cheese Frosting.

5)"Pretty in Pink" - Strawberry Bridal Shower Cake
2 cups white sugar
1 cup butter (2 sticks)
1 (3oz.) package strawberry gelatin
4 eggs

2 3/4 cups cake flour, sifted
2 1/2 t. baking powder
1 cup milk, room temp.
1 T. vanilla
1/3 cup stawberry puree, use frozen sweetened strawberries

Preheat oven to 350 degrees. Flour and grease two 9 inch round cake pans.

Cream together sugar, butter, and strawberry gelatin in large bowl until fluffy. Add eggs one at a time and beat well before adding another. Combine flour and baking powder. Stir into the batter - then stir in milk. Blend in vanilla and strawberry puree. Lastly, pour batter evenly into cake pans.

Bake for 25-30 minutes or until cake tester(toothpick) comes out clean. Cool cakes in pans for about 25 minutes. Then remove onto wire racks. Cool completely before frosting. Frost with your favorite frosting. We like Vanilla Frosting or Cream Cheese Frosting.

Our Favorite Frosting Recipes:

6) Decadent Chocolate Frosting
2 cups butter (4 sticks), softened
8 1/2 cups powdered sugar
2 1/2 cups baking cocoa
1 1/2 t. vanilla
1 cup milk

Cream butter in a large mixing bowl. Gradually beat in powdered sugar, cocoa and vanilla. Add enough milk until desired consistency.

7) Buttercream Frosting
2 cups shortening
8 cups powdered sugar
1/4 t. salt
1 1/2 t. vanilla
1 cup heavy whipping cream

Cream shortening in large bowl until light and fluffy. Add powdered sugar and continue mixing until blended well.

Add salt, vanilla, and 2/3 of the cream. Blend on low until moist. Add additional cream if necessary. Beat on high until fluffy.

8) Cream Cheese Frosting
8 ounce package cream cheese, room temp.
1/2 cup (1 stick) butter, room temp.
4 1/4 cup powdered sugar
1 1/2 t. vanilla

Combine cream cheese, butter, powdered sugar and vanilla. Beat until smooth.

9)Simple Vanilla Frosting
1/3 cup butter, softened
3 1/4 cups powdered sugar
1 1/2 t. vanilla
2 1/2 T. milk

Blend butter and sugar on medium. Stir in vanilla and milk. Beat until frosting is smooth and is spreadable.

10) Royal Icing (great for decorating)
3 egg whites, room temperature
1/2 t. cream of tartar
4 1/2 cups powdered sugar
Food coloring of your choice

In large mixing bowl, beat egg whites and cream of tartar on medium until fluffy. Gradually add sugar and mix well. Beat about 6 minutes. Add food coloring of your choice.

Great for adding writing, flowers, and other decorative touches to your bridal shower cake or cupcakes.
